Air Fryer Mini Egg Cookies

250g Plain Flour
225g Unsalted Butter
150g Mini Eggs, Crushed
125g Granulated Sugar
150g Light Brown Sugar
150g Mini Eggs, Crushed
50g Cocoa Powder
3 Egg Yolks
1tbsp Vanilla Extract
50g Cocoa Powder


  1. Add the butter, granulated sugar, and brown sugar to a bowl and whisk until soft and fluffy.
  2. Next, add the 3 egg yolks and vanilla extract and whisk into the butter and sugar.
  3. Add your cocoa powder, flour, and crushed mini eggs and stir together with a wooden spoon until combined. Then, knead with your hands until a dough forms.
  4. Line the bottom of your air fryer with baking paper and roll the dough into equal sized balls. Pop the balls onto the baking paper.
  5. Cook the cookies for 10 minutes at 180°C
  6. Remove from air fryer and let them cool slightly on a cooling rack before serving.
